It sends an electrical current through your feet and measures the resistance, which tells it how much water you're holding.

How it can tell body fat and bone and "visceral fat" apart, I haven't a clue. I suspect it's an approximation/algorithm based on the height and age you input.

The skin is still there - they just can these skin side down. I don't mind the whole sardines with the shiny skin and slightly crunchy bones. 🤤 I add olive oil mayo and my own hot sauce to the plain ones.
